The Best Guac Ever

Not to brag or anything but I make the best guac. That’s really all to say, unless you did what I did and I made it for a friend who has an avocado phobia. But, LBR, there was more for me, so whatevs. The heirloom tomato salsa was another issue. I had these beautiful tomatoes, but they were on the sweeter side. But the combination between the smoky guac with a dash of a sweet salsa spiced with a jalapeno, coupled beautifully with a Pacifico.

Although the back to school sales are already starting, I’ve been feeling as if my summer has just started. Outside Lands was my first foray into the season, since we had to deal with the more mundane and catastrophic events of the summer. BUT NOW. NOW with the warm weather, sunshine and nearing trips abroad, I’m feeling light in the heart and light in the toes. #cheesyAF. And the only thing that can make that even better is… guac.

THE BEST GUAC

  • three mashed ripe avocados
  • 1/3 red onion, diced
  • 1-2 tbsp mayo
  • 2 limes
  • 1 tbsp chopped cilantro
  • 2 cloves garlic minced
  • 1/8+ tsp paprika
  • 1 tbsp minced pickled jalapeños
  • a dash of jalapeño juice
  • 1 tomato, diced
  • salt and pepper to taste

Guac is all about ratio, so feel free to adjust anything. Mash up and serve with your favorite tortilla chips. Mine happen to the blue corn, FYI.
